What:  salted pigs belly or backside
When: as early as 1500 BCE
where: all over the world especially thriving citys/countrys
Why: used to flavor cooking, for its fats and oils, and as rewards for people of high status or renown. Used as a cheap but rich flavored ration in times of war. Developed very quickly and easily
